Happy Birthday.......Ice Cream?

I have been asked many times if I make my own birthday cake.  Actually, yes.  Since I live in a home surrounded by boys, I usually use the occasion as an excuse to try some girly design, but this this year I made something different.
Remember that recipe for Strawberry Ice Cream?  I've become somewhat addicted to it this summer.  For my birthday I made a batch of Strawberry Ice Cream and a delicious topping. 
Have you ever had one of those fruit cobblers/crisp things with the oatmeal, granola type crust and topping?  Well that granola stuff makes a stellar ice cream topping.  My husband calls it Cobbler Cobbler because it's like cobbler without the fruit.  In fact this recipe came from my sister-in-law's cobbler recipe.  Thank you, Heather!
You will need 1 1/2 cups of whole wheat flour, 1 cup of brown sugar, 1/2 cup of oatmeal, 1/2 cup of chopped pecans, and 3/4 cup of melted butter.  Throw it all into a large mixing bowl.
Stir it until it makes a dry, crumbly mixture.
Spread this mixture out on a parchment covered baking sheet.  Spread it nice and thin so it will get crispy and crunchy.
Bake at 350 Degrees Fahrenheit for approximately 20 minutes.  Watch it carefully, you just want it browned, not burned.
Let cool and crumble it on top of a bowl of fresh, homemade ice cream.   YUM!  Happy Birthday to me!  It was a good day.
