Strawberry Daiquiri Pie

Please pardon my recent absence.  I went on vacation expecting to post on the road, only to find that I had no Internet connection when I got there.  Yes, I still live in the technological dark ages and have no iPhone, etc.  (Sigh)  Maybe you'll forgive me when you take a bite of this pie.

You won't believe how easy it is.  Mix together one can of frozen strawberry daiquiri mix(thawed) and one can of sweetened condensed milk.

Fold in one 8oz. container of whipped topping.

Pour this mixture into a prepared crust.  I've made this pie with a regular baked crust and a graham cracker crust.  They both work well.  Which one is best just depends on your personal tastes.  This pie is best served frozen.  Thaw just enough before serving to make the cutting easy.

Another option is to make small, sugar cookie crusts for mini-pies.  Press the cookie dough into a mini-muffin tin.  I tried it with cupcake liners and without.  If you go the without version, make sure to spray the tin with non-stick spray.
These are great little bite-size desserts.
