Lotus Blossom Cupcakes

Ya know, spring is coming.  Yes, I'm aware that it's still below freezing outside and there's even snow still on the ground, but I keep thinking about spring.  Some day, hopefully soon, the snow will recede and the little plants that have been patiently waiting all winter will burst from the ground with beautiful colors.  Until then, what do you think about making some flowers of our own.

These flowers were so easy to make.

Start by rolling your fondant nice and thin.  Cut out flowers in three different sizes.  I cut two large, one medium, and one small for each blossom.

Place the cut outs in a flower former or anything that will give the desired shape.  I used my chocolate molds....

and the top of my piping tip caddy.  Let these sit until dry.

Once they are dry, stack them up starting with the most open large cut out, then the more closed large cut out, then the medium one, and finish with the smallest cut out.  I like the idea of the lotus blossom afloat on a bed of chocolate.

Come on spring!
