Gingerbread Cupcakes

I have to admit something to you.  I'm a sucker for cute sprinkles.  You know, the ones that look like little trees, or snowflakes, or gingerbread men.
Aren't these the cutest little gingerbread men you have ever seen?  These little guys are the reason for this post.  They told me they need a place to belong.  They were tired of being cooped up in that plastic container.

So I made these gingerbread cupcakes.  Topped with cream cheese frosting (snow) for the little fellas to play in.  I even sprinkled a touch of cake sparkles to really make it shine.
Is it just me, or is the guy in the middle making a snow angel?

Here is the recipe I used.

Gingerbread
adapted from  Food.com

2 1/4 cups all-purpose flour
1 tsp. baking soda
2 1/2 tsp. ground cinnamon
1/4 tsp. allspice
1/2 tsp. salt
1/2 tsp.  grated orange peel
1 tsp sugar
1Tbs. honey
1/2 cup unsalted butter, softened
2/3 cup molasses
2/3 cup brown sugar
2 eggs
1 tsp ground ginger
2/3 cup hot water

Beat together butter, molasses, sugars, honey, and eggs.  Add dry ingredients.  Last, slowly mix in the hot water.  Pour batter into cupcake liners.  Bake at 350 F for approximately 25 minutes.  Be careful not to over bake.
