Peanut Butter Frosting

This peanut butter frosting is a spin on the standard buttercream that I use.  The flavor is light and delicious.  It is a great compliment for chocolate cake. 




Peanut Butter Frosting

1 3/4 cups vegetable shortening
1/3 cup peanut butter
1/2 cup powdered coffee creamer
1 1/2 teaspoons vanilla
2/3 cups sour cream
2 lbs. powdered sugar

Mix together the first 5 ingredients until smooth.  Gradually add the powdered sugar.

  1. Don`t you believe in using butter. How can you suggest using shortening instead of butter.

  2. I tried this recipe (ok, well not with the peanutbutter), it is fantastic!! And to be quite frank, there is times when butter just isn't going to work for you. Like when you have a graduation cake to do and the weather is in the 90's. Butter frosting is going to ooze on down the cake, while this one will hold in those temps. And, the most important part, it tastes GREAT!! While I prefer butter to shortening too, there is times when shortening is necessary. The key is to use a high ratio shortening so you don't get that mouth feel of shortening. Seek some out at your cake decorating store and give this recipe a shot. You will more than likely be surprised at just how good this can actually taste. Let me know if you try it, and what you thought. Happy caking!
